Mexican Potato Soup

This is my family's favorite soup! Casey Royer

Ingredients
1
Onion diced

tbsp butter
6
cloves of garlic minced

Jalapeños diced
4
can of Campbell's chicken broth (10.5 oz)
1
can of tomato sauce (8 oz)
10.5
oz Water
8
Potatoes cubed
1
tbsp fresh chopped cilantro
1
tbsp lemon juice
1
Block of Monterey Jack or Pepper Jack cheese cubed
Directions
1.
Saute onion, jalapeño, and garlic in butter.
2.
Add chicken broth, tomato sauce, and water. Heat to boiling.
3.
Add potatoes and cilantro. Boil until potatoes are soft approximately 15 minutes.
4.
Salt and pepper to taste. Add lemon juice at the very end.
5.
Serve hot over cheese.
