Jalapeño Cheddar Corn Muffins

yellow cornmeal

pastry or ap flour

granulated sugar

baking powder
1
salt

buttermilk

eggs

grapeseed, olive or vegetable oil

corn kernels
6
grated cheddar cheese
4
diced jalapeno peppers
Directions
1.
Stir together the cornmeal,flour,sugar, baking powder, baking soda and salt.
2.
Stir together the buttermilk, eggs and oil.
3.
Combine the dry and liquid ingredients using the muffin method.
4.
Gently fold in the corn kernels, cheddar and jalapeno peppers.
5.
Portion the batter into greased muffin cups, filling them 3/4 full.
6.
Bake at 375°F(190°C) until the centers of the muffins bounce back when lightly pressed, approximately 20-25 minutes.
