Brazilian Tilapia Stew

A hearty South American stew. Switch up the fish depending on what is in season!

Ingredients

tilapia flanks, cut into chunks
3
bell peppers (green, red, yellow), diced
2
onions, chopped
16
ozs can diced Tomatoes, drained
16
ozs can Coconut Milk
2
tbsp olive oil
1
tbsp paprika
1
tbsp cumin
1
tbsp salt
2
tsp Black Pepper
3
tbsp lime juice
1
tsp Cayenne Pepper
more to taste
Directions
1.
In a small bowl, combine Lime Juice, Salt, Pepper, Cumin, Cayenne, and Paprika. In a larger bowl, coat tilapia chunks. Cover and refrigerate for at least 20 minutes (24 hours preferred)

In large pot, heat oil over medium-high heat. Fry onions for three minutes, then reduce heat to Medium.

Combine bell peppers, tomatoes, and tilapia. Cover with coconut milk. Let simmer, covered for 15 minutes, stirring occassionally.
4.
Taste stew (liquid portion). Add seasonings to personal tastes. Heat another five to ten minutes.
