Apricot Cornish Hens Cas

Marinate hens overnight in:

cup oil

cloves of garlic, chopped

tbsp lemon juice

tsp rosemary

tsp thyme

crushed bay leaf
salt and pepper
Sauce:
1
medium minced onion
1
cup apricot preserves
1
tbsp soy sauce
2
tsp dijon mustard (cook for 7 - 10 minutes on stove)
Directions

Cook at 350, covered for about 1 hour, then uncover for last half hour or more until skin is crispy and the hens are done. Pour over cornish hens
