Cornbread Stuffing/Dressing Shk

From Steve Kaplan: This is a long-standing family favorite. The great thing about this recipe is that it can be prepared with gluten free cornbread – and for vegetarians, can be made as dressing and baked. Also you can make baked as extra and mix it with the in-turkey stuffing just to have more.

Ingredients
For a 14-16 pound turkey

packages cornbread mix (like Jiffy brand of Simple Truth & GF) – make the day before
3/4
up chopped celery
1
green pepper – chopped (medium, not too fine)
2
med onions – chopped (medium, not too fine)
1
cup of pecans – chopped
1
medium apple – chopped
2-1/2
tsp of poultry seasoning
1
tbsp salt
1
tsp pepper
2
sticks of melted butter
2
cups of broth or more (chicken or vegetable)
Directions
1.
Mix all together and then add butter (may not need this much butter for in-turkey stuffing) and for baked you can add extra both
2.
Then add broth, start with ½ cup
3.
If you choose to bake it, rather than stuff into the turkey, bake at 300 degrees uncovered for 45 minutes to an hour
