Don’S Excellent Squash Dyb

Sit back and accept compliments of all the squash-hating people you are having dinner with.

Ingredients
3
lb winter squash (butternut),
peeled and seeded
3
plus cloves garlic, peeled and minced
1/2
tsp salt
1
leek
2
slices bacon
1
TB butter
3
TB sour cream
salt & pepper
2/3
cup grated Swiss or gruyere cheese
Directions
1.
Cut squash into 1” chunks.
2.
Put squash, garlic, ½ tsp. salt and ½ c. water into saucepan.
3.
Cover and cook till squash is tender – about 15 minutes (Add more water if necessary; if excess, drain at end of cooking).
4.
Meanwhile, chop bacon into 1/2” pieces.
5.
Melt 1 TB butter in skillet.
6.
Cook bacon in butter till golden, not crisp. Set bacon aside; leave fat in pan.
7.
Clean and chop leek. Cook leek, covered, in pan with bacon fat, until translucent.
8.
Mash squash with fork. Add leek, bacon, sour cream and salt and pepper. Butter a round baking dish. Put squash in about ¾” deep (can be done the day before up to here).
9.
Sprinkle with grated cheese.
10.
Cover with foil, shiny side down.
11.
Bake @ 350° for 15 minutes.
12.
Remove foil, and bake 5 min more.
