Directions
1.
Use a 9-inch pie pan, prepare and roll out; if desired sprinkle apples with lemon juice; in a large mixing bowl stir together sugar, flour, cinnamon and nutmeg.

Add apple slices (if you are crazy, add those raisins or walnuts here too).

Gently toss until coated. Transfer mixture to pie place.

Trim pastry to edge of pie plate; cut slits in remaining pastry; place on filling and seal; crimp edge as desired.

To prevent over browning, cover the edges of the pie with foil. Bake at 375 for 25 minutes, remove foil, bake for 25-30 more until the top is golden.
