Shakshouka (Israeli ‘Fry Up’)

Basic breakfast with a twist. Yummy, fast and easy!

Ingredients

tbsp Olive Oil
1
onion sliced
2
bell peppers (any color) chopped
1
tsp paprika
pinch of dried chili flakes
4
ripe tomatoes chopped
2
eggs
to serve
paprika
toasted pita
Directions
1.
Heat the oil in the frying pan, add onions and capsicum and cook until softened.
2.
Sir in paprika and chili flakes and cook for 5 minutes. Add the tomatoes and cook for another 2 minutes. Season with Salt and pepper.
3.
With wooden spoon, clear two holes in the mixture. Crack an egg into each one and cook to your liking. Sprinkle with a little paprika and flat bread
