Just before it reaches that temperature, pour half of the gallon jug of water into a small pot and bring it to a boil. Let the other half reach room temperature.

Scrape the skin of the milk.

Add the seed yogurt to the milk, and stir.

Pour the milk into the jars and put them in the cooler.

Pour the boiling half-gallon of water back into the jug with the room temperature half, then put it in the cooler.
