Spinach Soup

Warm and filling and good for you!

Ingredients
1
large potato skinned and sliced very thin
4
cloves garlic minced
1
large yellow onion sliced thinly
1
large container (10 oz) baby spinach
4
cups chicken broth (or water)
1/4
cup cream
corn starch (optional)
sour cream (optional)
pine nuts
Directions
1.
Place onion and garlic in 2 T oil and saute.
2.
Add 1 Cup chicken broth and potatoes on medium heat until potatoes are like mush.
3.
Rinse the spinach well and trim off stems. I soak the spinach and make sure there are no stems.
4.
Place spinach in pot with onion and potatoes. Add 3 Cups chicken broth. Cover and on medium heat bring to a boil for 5 minutes stirring constantly. Let sit and cool for 30 minutes.
5.
Put in food processor.
6.
After processing until smooth, place back in pot and add cream and add corn starch if needing thickening.
7.
Serve warm with a dollop of sour cream. You can saute some pine nuts and add if you want.
