Cabbage Roll Soup

I discovered this recipe when the need to use up cabbages from a CSA became necessary! A warm bowl of this is the perfect comfort food. I use about a 1-1 1/2 pounds of Italian sausage instead of the beef and pork in the recipe for added flavor.

Ingredients

large onion diced
3
cloves garlic minced

lb lean ground beef
1/2
lb lean ground pork
3/4
cup uncooked long grain rice
1
medium head cabbage chopped (core removed)
1
can (28 oz) diced tomatoes, or 4 1/2 cups diced fresh tomatoes
2
tbsp tomato paste
4
cups Beef Broth
1 1/2
cup V8 or other vegetable juice
1
tsp paprika
1
tsp thyme
1
tbsp Worcestershire sauce
1
bay leaf
salt and pepper to taste
Directions
1.
In a large pot, brown onion, garlic, pork and beef. Drain any fat.
2.
Stir in chopped cabbage and let cook until slightly softened ( about 3 minutes)
3.
Add all remaining ingredients, bring to a boil and reduce heat to medium low. Cover and simmer on low until rice is fully cooked (about 25-30 minutes)
4.
Remove bay leaf and serve.
