Tasty Beef Stew

This is a tried and true recipe. I often made it for Halloween to provide a hearty meal before the boys started off trick or treating. They learned to despise it because it meant they had to sit and eat before gathering the candy! Today, as adults, it is a requested meal and they often reminisce how they once hated it!

Ingredients
1 1/2
lb lean beef (cut into 1-2" cubes)

tsp salt
1/2
tsp basil
1/4
tsp pepper
2
stalks celery, sliced diagonally
4
carrots (halved lengthwise, then cut into 2" pieces)
2
onions (cut in 1/2" slices)
2
cups vegetable juice
1
tsp sugar
1
clove garlic
3
large potatoes (peeled and cubed)
Directions
1.
Place Beef in 3 quart casserole. (No need to brown) Sprinkle with salt, basil and pepper. Top with celery, carrots, onions and garlic. Combine vegetable juice with sugar. Pour over meat and vegetables, tossing to coat all pieces. Cove tightly.
2.
Bake in 300 degree oven for 3 hours. Add potatoes, stirring to incorporate. Bake for 45 minutes and serve.
