Quorn Lasagne Al Forno

Classic lasagne with a twist...Quorn mince.

Ingredients

tbsp olive oil
1
onion, finely chopped
1
red pepper, chopped
2
garlic cloves, finely chopped
500
gr Quorn mince
300
ml vegetable stock or red wine
2
tbsp tomato paste
400
gr can chopped tomatoes
300
gr chestnut mushrooms, sliced
2
tbsp Worcestershire sauce*
Packet Lasagne mix
Large jar Lasagne sauce
Large jar béchamel sauce
Lasagne sheets
Parmesan and/or cheddar cheese, grated
1
tsp mixed herbs
Salt and ground black pepper
Directions
1.
To make the Bolognese sauce, heat the oil and fry the onion and pepper for 10 minutes until softened. Add the garlic and cook for 1 minute.

Add the Quorn mince and mix with the onion and pepper. Stir in the tomato paste and vegetable stock/wine, cover and bring to the boil.
3.
Add the tomatoes, mushrooms and Worcestershire sauce*. Add the lasagne mix and sauce. Add the mixed herbs. Season well.
4.
Bring back to the boil, then simmer for 20 minutes.
5.
Preheat the oven to 180C. Spoon one-third of the bolognese sauce over the base of a greased 2.4ltr (4 pint) ovenproof dish. Cover with a layer of lasagne sheets, then a layer of the béchamel sauce.
6.
Repeat these layers twice more, finishing with a layer of béchamel. Sprinkle the cheese over the top and stand the dish on a baking sheet/tin foil in a roasting pan.
7.
Cook for 45 minutes or until well browned and bubbling.
