Vegetable Slice

Serve with salad for a light and healthy meal, or cut into smaller pieces to keep in the fridge as a snack.

Ingredients
1/2
cup zucchini, grated
1/2
cup celery, finely chopped
1
cup cauliflower, steamed, finely chopped
1/2
cup whole meal self raising flour
1/2
cup carrot, grated
1/2
cup leek, finely chopped
2
tbsp spring onion, sliced
2
tbsp olive oil
4
eggs, lightly beaten
250
diced bacon
4
button mushrooms, diced
Directions
1.
Saute all the vegetables in olive oil in a frypan over moderate heat, for 3-5 minutes or until softened. Place contents of frypan in large bowl
2.
Cook diced bacon in frypan. Once bacon is cooked, add to bowl (with vegetables) then toss through flour.
3.
Line lamington tray or shallow baking dish with baking paper and place mixture in tray.
4.
Stir the lightly beaten eggs through the mixture and spread out evenly.
5.
Bake in moderate oven for 30 minutes or until set.
6.
Loosen edges with a knife and cut into squares.
