Roast Pumpkin And Chicken Pasta

Keep it simple with roast pumpkin and chicken pasta.

Ingredients

gs pumpkin, diced

tbsp olive oil
400
gs penne pasta
2
chicken breasts, shredded (pre-cooked)
1
clove garlic, crushed
1
punnet cherry tomatoes, halved
lemon juice
parmesan cheese
Directions
1.
Preheat oven to 200?C. Put pumpkin into a baking dish and toss in 2 tablespoons of olive oil. Bake for 20 minutes, or until golden and soft.

While the pumpkin is cooking, bring a large pot of salted water to boil. 10 minutes before the pumpkin is done, throw the penne pasta into the boiling water.

Heat a large non-stick frying pan over a high heat. Add 2 tablespoons of olive oil followed by the chicken, garlic, tomatoes and lemon juice. Cook for 1 minute, tossing the ingredients together. Remove from heat and season to taste.

Drain the pasta and add to the pan along with the pumpkin. Toss to combine and add a little extra olive oil and lemon juice if desired.
5.
Serve with a sprinkling of grated parmesan cheese.
