Red Lentil Soup

Ingredients
1
large onion (chopped)
2-3
cloves garlic (chopped or crushed)

medium tomatoes (chopped - or one can of diced tomatoes)

cups red lentils (rinsed)
1/2
tsp salt
1/2
tsp turmeric
1/2
tsp cumin
8
cup (= 2 tetra packs) veggie broth
1
package of dill (de-stemmed and roughly chopped)
1
lemon (juiced)
3
large carrots (chopped into chunks)
Directions
1.
Sauté onion, garlic and tomatoes in olive oil until soft.
2.
Add red lentils, stir. Add salt, turmeric and cumin, stir.
3.
Add veggie broth, dill, lemon juice and bring to a gentle boil.
4.
Add chopped carrots and reduce to a simmer for 1 hour.
