Chicken Waldorf Salad

Add yogurt in replace of mayo to lighten up this classic salad for lunch.

Ingredients

head of bibb lettuce, washed and dried
2
pieces of chicken breast, cooked , skin off and cubed
1/2
cup chopped, slightly toasted walnuts
1/4
cup celery, thinly sliced
1/2
cup red seedless grapes, sliced or raisins
1
sweet apple, cored and chopped
3
tbsp mayonnaise
1
tbsp fresh lemon juice
1
dash of salt and pepper
Directions
1.
In a medium sized bowl, whisk together the mayonnaise and the lemon juice., altering lemon juice to your desired taste, and seasoning with salt and pepper.
2.
Add chopped apples, celery, grapes, walnuts, and chicken to mayo. Adjust seasoning and serve on a bed of fresh bibb lettuce.
