Pork With Clams

"An easy, tasty pork and clams recipe made by my Portuguese in-laws at every chance they get! Add a little bit of chili powder or crushed chilies for extra zing. Great for company!"

Ingredients

lb pork roast, cut into 1 inch cubes
1
cup dry white wine

tsp paprika
1
bay leaf
2
whole cloves
salt and pepper to taste
2
cloves garlic, chopped
4
tbsp margarine, divided
2
onions, sliced
4
tomatoes, chopped
5
cloves garlic, crushed
2
lb clams in shell, scrubbed
4
tsp chopped fresh cilantro
2
tsp chopped fresh parsley
1
lemon, quartered
Directions
1.
Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.

In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.

Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.

Bake for 30 minutes in the preheated oven, or until cheeses are melted.
