Lobster Tails

Ingredients
4
medium (5-6 oz) lobster tails
fresh parsley, finely chopped
2
pressed garlic cloves
salt & pepper
3/2
tbsp olive oil
3/2
tbsp fresh lemon juice
4
tbsp unsalted butter, divided
Directions
1.
Butterfly lobster tails
2.
Pre-heat oven to broil
3.
Stir together 1 Tbsp parsley, garlic, salt, pepper, olive oil and lemon juice
4.
Place lobster tails in a 9x13 roasting pan
5.
Pour marinade evenly over the tops of the lobster tail
6.
Top tails with butter, cut into small pieces
7.
Broil lobster tails on high heat, 10-11 minutes, or until opaque and white in the center
8.
Melt butter for dipping.
