Fruit Reduction Topping

Ingredients
16
oz of fruit (strawberry, raspberry, blueberry, any berry will work.)
2
tbsp vanilla extract.
2
tbsp corn starch.
1/2
cup Confectioners (powdered) Sugar
Directions
1.
Wash, Core & dice fruit. (I cut it to be approx. the same size as I would for a pie. Maybe just a bit smaller)
2.
Combine fruit at vanilla extract in skillet, over Med-Low heat.
3.
Bring to a boil while stirring (frequently). This should take ~10 mins.
4.
Combine sugar and starch in a separate bowl. (you don’t need to sift either ingredient, but try to make sure that there are no clumps in the starch.
5.
Add sugar and starch to pan.
6.
Mix over low heat until topping is uniform.
7.
Let cool on counter (1-2hrs.) uncovered. Let cool in refrigerator (covered) (overnight or minimum 3 hrs.)
8.
Spread over top of cheesecake and enjoy.
