Chicken Soup

"It’s chicken soup, but it’s made with orzo and has cinnamon in it- soooo good!" -Michelle Swajanen

Ingredients
1-5
to 6 lb stewing chicken

cups Water
1
onion chopped
2
tsp salt
1/4
tsp pepper
1
bay leaf
1 1/2
cups orzo
1
cup Chopped celery
2
tbsp parsley
2
cups carrots
1-2
tsp cinnamon
Directions
1.
In large pot, combine chicken, water, onion, salt, pepper, and bay leaf.
2.
Bring to boiling; simmer covered about 2 hours, or until chicken is tender.
3.
Remove chicken from broth; cool and remove meat from bones.
4.
Cut chicken into bite size pieces, set aside.
5.
Skim excess fat from broth, discard bay leaf.
6.
Bring broth to boiling add carrots, celery and parsley.
7.
Simmer covered until carrots are tender, about 15-20 minutes, add chicken and orzo and heat through until orzo is cooked 8-10 minutes.
8.
Add cinnamon 1 tsp., then more if desired.
9.
Season with more salt and pepper if desired.
10.
Note - If you use boneless chicken breast, then substitute chicken broth for the water. And you don't have to simmer as long, maybe one hour!
