Three-Bean Vegetarian Chili

Ingredients

cup canned black-eyed peas

cup canned chickpeas
1/2
cup canned Great Northern white beans

tbsp extra-virgin olive oil
1/4
cup diced onion
1
clove garlic, peeled and minced
1/4
cup diced celery
2/3
cup diced poblano pepper
2
cups organic low-sodium vegetable broth
1
tbsp chili powder
1/4
tsp chopped fresh parsley
1/4
tsp cumin
1/4
tsp fresh thyme
1/8
tsp cayenne pepper
1/4
cup sea salt
Directions
1.
Drain and rinse beans.
2.
Heat oil in a stockpot over medium.
3.
Saute onion, garlic, celery, and peppers for 5-7 minutes.
4.
Add vegetable broth, beans, parsley, and spices.
5.
Cover. Simmer for approximately 1 hour or until beans are tender and liquid thickens slightly.
6.
Remove from heat and chill.
