Famous Barr French Onion Soup

Ingredients
3
lb peeled yellow onions
4
ozs unsalted butter
1
tsp cracked pepper
2
paprika
2
tbsp salt
1
bay leaf
3/4
cup flour
3
qt beef broth
1
cup dry white wine
Directions
1.
Slice onions 1/4 inch thick.
2.
Melt butter in large stock pot and add onions.
3.
Sauté slowly for 1.5 hours on medium heat.
4.
Add all other ingredients except for the broth.
5.
Sauté over low heat for 10 minutes more.
6.
Add broth slowly and simmer for 2 hours.
7.
Adjust color to a rich brown with Kitchen bouquet.
8.
Season to taste with salt and pepper.
9.
Place in refrigerator overnight.
10.
To serve: reheat soup and then fill individual dishes with a slice of toasted french bread. Place 1-2 slices of swiss or provolone cheese on top of the bread. Then fill the town with soup, topping off with additional cheese to cover dish "rim to rim." Place soup under broiler until tops are golden brown. Serve immediately.
