Corn Casserole... From Penny

Nana ... Wrote Very Good From Penny... A lady at First Baptist Church that she works with in the kitchen at the church and her friend

Ingredients
1
can(15oz) Kernel Corn Drained
1
can (15 oz) Cream Corn
2
Eggs well beaten
1
box Jiffy corn Muffin Mix
1/2
cup margarine (i use Butter)
1
large onion - diced
1
green pepper - diced
1
(8 oz) carton sour cream
2
cups grated cheddar cheese
Directions
1.
In medium saucepan: combine butter, onion, green pepper, sauté over low heat.

In meduim bowl- combine 2 kinds of corn, muffin mix and eggs.
3.
Mix well and season to taste
4.
Add onion and pepper mixture.
5.
Pour into greased 9x13x2 Pyrex dish
6.
Spread sour cream over top, but do not mix in.
7.
Sprinkle grated cheese on top
8.
bake at 400 degrees for about 30 minutes or until lightly browned
