Rhubarb Cake

Oma Anna's Recipe - the only rhubarb recipe you will ever need!

Ingredients
Crumbly Dough:

cup (113 gr) butter
2
cups flour
2
tbsp sugar
Filling:
3
cup rhubarb cut into 2cm slices
3
egg yolks
1
cup sugar
2
tbsp flour
1/2
cup cream
1/8
tsp salt
Topping:
3
egg whites
1/2
cup sugar
1/2
tsp vanilla
Directions

For the crumbly dough pulse all the ingredients in a kitchen machine or mix using a fork or pastry blender. Press dough onto bottom and up sides of a pie dish. (*Note: Luise and Judith only use about 3/4 of crumbs and freeze the rest for another time.) Bake at 350 degrees Fahrenheit for 10 minutes.

For the filling whisk together the cream, sugar, four, egg yolks and salt until creamy. Mix in rhubarb and pour into pastry shell. Bake for a further 40 minutes.

For the topping beat the egg white until stiff, add sugar and vanilla and beat until shiny. Top cake with fluffy meringue peaks using the back of a tablespoon. Bake for a further 10 minute watching closely until tops of peaks are lightly browned.
