Apple Strudel

Luise's recipe for apple strudel

Ingredients
Strudel Dough:
250
gr fine flour such as pasta flour (*it is possible to use normal flour as well)
20
gr neutral vegetable oil such as sunflower
pinch of salt

ml lukewarm watter

Filling:

kg apples peeled, quartered and sliced thin

gr sugar
cinnamon

gr raisins

gr bread crumbs roasted

gr butter melted
plus additional 80g butter melted
Directions
1.
For the dough, combine all the ingredients in a kitchen machine and run it until you have a smooth dough. Turn it out onto your lightly floured work surface and knead a couple of times. Form a ball, place on floured surface, lightly oil the top, cover it and let it rest for about 30 minutes.

After the dough has rested roll it into a rectangle on a lightly floured surface. Then transfer to a table covered with a lightly floured tablecloth and stretch it out until you can read a newspaper through it. Work quickly so the dough doesn't dry out. When you have stretched it as far as it will go, cut off the thicker edges.

Cover 2/3 of the dough from the long edge with breadcrumbs roasted in butter and apple, raisin, sugar, cinnamon mixture. Dribble remaining butter onto last 1/3 of dough and butter baking sheet. Now pick up the table cloth at the long fruit covered side of the dough and start rolling dough into a sausage. Use table cloth to transfer to baking sheet and brush top of strudel generously with melted butter.

Bake 40 minutes at 180 degrees Celsius. Halfway through baking brush some more butter onto strudel. Eat strudel cold or lukewarm.
