Shirin Polo

Mom's recipe for Nosrat's Shirin Polo - chicken with orange peel and pistatios

Ingredients

chicken

gr almonds
100
gr pistachios shelled
5
tbsp sugar
safron
3
organic oranges
carrots
Directions
1.
Boil the chicken in 3 glasses of water until cooked through when approx. 1 glass of water remains. Let it cool and then remove chicken meat in bite-sized pieces.
2.
Peal oranges using a peeling knife to take off as little of the white pip with the peel. Cut peel into fine julienne. Briefly cook in boiling water 3 times and remove water every time. This removes any bitterness.
3.
Cut carrots into julienne, as well as pistachios and almonds.
4.
Fry chicken meat generously in butter, add safron to color. Add carrots, nuts and sugar and fry.
5.
Add chicken broth and broil briefly on high heat.
6.
Serve with Persian basmati rice.
