Avocado Mousse

Rich, sweet unique filling to go between layers of a chocolate cake. Yum!

Ingredients

chilled firm-ripe avocados
1 1/2
lemon juice
3/4
cup milk
1/2
cup sugar
1/2
cup chilled heavy cream
Directions
1.
Halve and pit avocados and scoop the flesh into a food processor.
2.
Add lemon juice, milk, sugar and a pinch of salt.
3.
Puree until completely smooth.
4.
In a separate bowl beat the cream until it just holds a stiff peak.
5.
Fold avocado mixture into whipped cream gently and thoroughly.
6.
Eat alone as a desert or spread between layers of a chocolate cake.
