Mexican Mac And Cheese

This is from moms kitchen and the BEST mac and cheese ever! I like to kick mine up in spice a bit, and have added the steps below in addition to moms traditional recipe.

Ingredients
1
box shell pasta
2
cans mexican stewed tomatoes
1
yellow onion diced
2
tbsp butter
3
cups shredded cheese
Salt and pepper to taste
For a little spice
1
can fire roasted salsa (Safeway Brand in the tomato aisle)
Directions
1.
Preheat oven to 350 F.
2.
Cook and drain pasta according to directions on package.
3.
Dice up the onion and place in a microwave safe bowl with the 2 tbs of butter and microwave until onions are soft.
4.
Chop up the stewed tomatoes and set aside, keep the juice from the can.
5.
Drain the pasta once cooked and leave in the pot. Add onion/butter mix, stewed tomatoes and any juice from tomatoes.
6.
Mix together, add 2 cups of cheese and salt and pepper to taste. You can add more cheese if you like it cheesy.
7.
Spread out in a 9x13 caserole dish. Use remaining cheese to cover the top of the dish.
8.
Bake at 350 F for 25 minutes.
9.
For a little spice, sub out one can of Mexican Stewed tomatoes for 1 can of the Fire Roasted Salsa
