Take out the meat of the greatest Oysters and save the liquid that comes from them. Steam and put in to a piggin. Put half a pint of White Wine, and half a pint of White Wine vinegar. Put in some whole Pepper and sliced Ginger. Boil all these together with two or three Cloves. When they have boiled, put your Oysters in the barrel, and let them for boil 2 or 3 minutes. Then take them up, and let them stand cold. Then put in your Oysters somewhere cool.
