Peanut Butter Cake

Ingredients

cup (1 1/2 stick) Butter
1/4
cup creamy peanut butter
1/2
cup buttermilk
3
tsp baking powder
3
cups sifted all-purpose flour
4
eggs
2
cups sugar
1/2
cup water
1
tsp vanilla
PEANUT BUTTER TOPPING:
1/4
cup creamy peanut butter
1
cup confectioners sugar

tbsp buttermilk
Directions
1.
Let butter, peanut butter, eggs and buttermilk warm to room temperature for easy mixing (butter should be very soft).
2.
Grease and flour a 12 cup bundt pan. Preheat oven to 350 degrees.

Combine room temperature ingredients with remaining ingredients in a large bowl.
4.
Beat at slow speed with electric mixer for 30 seconds then at medium speed for 2 minutes scraping side of bowl.
5.
Pour into prepared pan bake in a moderate oven at 350 degrees for 45 minutes, then lower heat to 325 and bake 20 minutes longer or until top springs back when lightly pressed with finger tip. Cool on wire rack for 10 minutes turn out; cool completely before frosting.

PEANUT BUTTER TOPPING:

Combine peanut butter, confectioners sugar and buttermilk in a small bowl until smooth - spoon over cake.
