Apricot Orange Refrigerator Cake

Ingredients

tbsp gelatin

cup cold water

cup orange juice

cup sugar
1
tbsp grated orange rind
2
tbsp lemon juice

cup apricot jam (approximately)
1 1/2
dozen ladyfingers
1
cup heavy cream, whipped
2
cups apricot puree
2
egg whites
1/4
cup sugar
Directions
1.
Soften gelatin in water. Combine orange juice and sugar. Cook over low heat, stirring until sugar in dissolved. Continue cooking until mixture boils. Remove from heat and add gelatin. Stir until completely dissolved. Add orange rind and lemon juice. Chill until slightly thickened. Spread each ladyfinger with apricot jam and put together sandwich style. Line the sides of an 8-inch springform pan with ladyfingers. Fold cream and apricot puree into orange mixture. Beat egg whites until frothy, then add sugar one tablespoon at a time, beating thoroughly after each addition. Continue beating until stiff, then fold into orange-apricot mixture. Pour slowly into springform pan. Chill until firm (at least several hours).
