Caprese Salad With Heirloom Tomatoes And Fresh Summer Squash

Heirlooms are in season and that means caprese salad! My twist to enjoy this simple and beautiful salad is to include fresh summer squash to add height, color and texture to this summer favorite.

Ingredients
3
heirloom, 1/4-inch thick slices
1
lb fresh mozzarella
we olive basil extra virgin olive oil
we olive blackberry balsamic
salt and pepper
1/5
lb of fresh summer squash ribbons (peel like potato peels with peeler)
fresh basil cut into ribbons (chiffonade)
lemon zest and juice
Directions
1.
Salt and pepper heirloom tomatoes on both sides. Place on top of cooling rack on top of cookie sheet for liquid to drain from tomatoes. Let drain for 30 minutes-2 hours. Layer alternating slices of heirlooms and mozzarella on to individual plates or large platter for family style.

Create Squash Ribbons with potato peeler using fresh summer squash. Toss with Salt and pepper and 1 Tablespoon of Basil Olive Oil and Juice from Lemon along with zest. Place ribbons on top of tomatoes and mozzarella trying to add height to dish. Drizzle the salad with basil extra-virgin olive oil and Blackberry Balsamic and garnish with basil.
