Boston Cream Pie

Ingredients

cup butter

cup sugar

eggs, well beaten
1 3/4
cups sifted cake flour

tsp baking powder

tsp salt
1/2
cup milk
1/2
tsp vanilla
CREAM FILLING:
2/3
cup sugar
1/3
cup flour
1/8
tsp salt
2
cups scalded milk
1
tsp vanilla
2
eggs or 4 egg yolks
Directions

Cream the butter and sugar until mixture is light and fluffy. Add the well beaten eggs and blend well. Sift flour once, measure and sift twice with baking powder and salt. Add to the first mixture alternatively with the milk, beating after each addition. Add vanilla. Pour two well-greased 8-inch layer-cake pans and bake in a moderately hot oven, 375 degrees for about 20 to 25 minutes, or until done. When cake has cooled, put two layers together with cream filling.

Combine the dry ingredients. Add the scalded milk gradually, stirring constantly, and cook in a double boiler for about 15 minutes, stirring constantly until the mixture thickens. Beat egg, add a small amount of the cooked mixture to them, blending well. Return to mixture in double boiler and cook for about three minutes. Add flavoring and cool before spreading between layers of cake. For a thicker filling add one-half cup flour.
