Line a nine-inch pie plate with pastry and place in refrigerator until ready to be filled. Wash, pare and cut apples into quarters or eighths. If apples are juicy, mix one to two tablespoons flour with sugar, salt and spices. Pour one-forth of this mixture in the bottom of pie crust. Arrange apples in neat rows piling pieces up toward center of pie. Sprinkle lemon juice over fruit and place remaining sugar-flour mixture over top.

Dot with butter. Moisten edge of pie crust with cold water. Fit top crust over apples, trim and seal edge of pie. Place in hot oven, 450 degrees for 10 minutes, then reduce heat to 350 degrees for about 35 to 40 minutes, or until done.
