Black Bottom Pie

Ingredients

baked pie shell (9 inches)
1
tbsp unflavored gelatin
1/4
cup cold water
2
cups milk
1
cup sugar
1 1/2
tbsp cornstarch
1/4
tsp salt
4
egg yolks
1 1/2
squares unsweetened chocolate
1
tsp vanilla
1/4
tsp cream of tartar
1
tbsp rum or 1/2 tsp rum flavoring
TOPPING:
1/2
cup heavy cream, whipped
2
tbsp confectioners' sugar
1/2
oz unsweetened chocolate, shaved
Directions

Soften the gelatin in the cold water. Scald the milk. Combine one-half cup of the sugar with cornstarch and salt. Add a little of the hot milk, stir, then return to the remaining scalded milk and cook, stirring constantly, until smooth and thickened. Pour over beaten egg yolks, stirring constantly. Return to heat. Cook for two minutes longer. Add gelatin, stirring until dissolved.

Remove one cup of cooked mixture to a separate sauce pan in which the chocolate has been melted (over hot water). Stir until well blended. Cool, then pour into the baked crust. Chill. Chill remaining custard and when it begins to thicken, beat until fluffy. Add cream of tartar to egg whites and beat until foamy; gradually beat in the remaining one-half cup of sugar and the rum flavoring. Fold into the custard mixture and pour over chocolate mixture in pie pan. Chill well. Just before serving, top with whipped cream sweetened with confectioners' sugar. Sprinkle with shaved chocolate.
