Coconut Crumble Coffee Cake

Ingredients

package yeast, compressed or dry granular
1/4
cup lukewarm water
1/2
cup milk
1/4
cup shortening
1/4
cup sugar
1/2
tsp salt
1
egg, beaten
1 1/2
cups sifted enriched flour (about)
COCONUT CRUMBLE STREUSEL:
1/4
cup brown sugar
2
tbsp enriched flour
2
tbsp margarine or butter
1/4
cup coconut
1/4
cup chopped nuts
Directions
1.
Soften yeast in lukewarm water. Scald milk. Add shortening, sugar, and salt. Cool to lukewarm. Add eggs and softened yeast. Mix well. Add enough flour to make stiff batter. Beat until smooth. Let rise in warm place until doubled in bulk. Stir down. Spread in greased pan, 7 x 11". Sprinkle streusel on batter. Cut through batter with fork or spoon so that part of streusel mixes into batter. Let rise until light and puffy. Bake in moderately hot oven (400 degrees) about 30 minutes.
