Peach Custard Pie

Ingredients

unbaked 9-inch pie shell
1
cup sugar
1/8
tsp salt
1
tbsp flour
1/3
cup cream
1/2
cup milk
3
egg yolks, slightly beaten
4
large ripe peaches, peeled and halved
MERINGUE:
3
egg whites
1/8
tsp salt
6
tbsp sugar
Directions
1.
Combine sugar, salt and flour and blend. Add cream, milk, and slightly beaten egg yolks and blend together until mixture is smooth.

Place peeled peach halves, cut side up, over bottom of dough-lined 9-inch pie pan. Pour custard mixture over and around peaches. Bake in a 450 degree oven 12 to 15 minutes, or until crust begins to set and lightly brown. Reduce heat to 350 degrees and continue baking about 35 minutes or until custard mixture begins to set.

Remove pie from oven and spread at once with meringue made with egg whites, salt and sugar. Return to 325 degree oven and bake 15 minutes longer. Cool on wire cake rack.
