Cherry Chocolate Biscotti

Ingredients

cup sugar
1/2
cup butter or margarine, softened
2
tsp almond extract

eggs
3
cups all-purpose or unbleached flour
2
tsp baking powder 1/2 cup chopped candied cherries
1/2
cup miniature chocolate chips
3
tbsp chocolate chips, melted if desired
3
tbsp vanilla milk chips, melted in desired
Directions
1.
Heat oven to 350 degrees. Lightly grease cookie sheet. In large bowl, beat sugar and butter until well blended. Add almond extract and eggs; blend well. Lightly spoon flour into measuring cup; level off. Add flour and baking powder; mix well. Stir in cherries and chocolate chips. Shape dough into two 10-inch rolls.

Place rolls 5 inches apart on greased cookie sheet; flatten each with 3-inch width.

Bake at 350 degrees to 20 to 25 minutes or until set and light golden brown. Cool 10 minutes; cut diagonally with serrated knife into 1/2 inch slices. Arrange slices, cut side down; on ungreased cookie sheet.

Bake at 350 degrees for 8 to 10 minutes or until bottoms begin to brown; turn. Bake an additional 5 minutes or until browned and crisp. Cool completely.
5.
Drizzle cookies with melted chocolate and vanilla milk chips, if desired. Store in tightly covered container.
