Standard Sponge Cake

Ingredients

cup sifted cake flour
1
cup sifted sugar
1 1/2
tsp grated lemon rind
2
tbsp water
5
egg yolks
1 1/2
tbsp lemon juice
5
egg whites
1/4
tsp salt
1/2
tsp cream of tartar
confectioners' sugar
Directions
1.
Sift flour once, measure, and sift flour four times. Add one-half cup sugar, lemon rind, and water to egg yolks and beat until very thick. Add lemon juice gradually, beating constantly. Stir in the flour until just blended. Beat egg whites and salt with rotary beater or flat wire whisk. When foamy add cream of tartar and beat until stiff enough to stand in soft peaks. Add remaining sugar, two tablespoons at a time, beating well after each addition. Fold in the egg yolk mixture. Turn into an ungreased nine-inch tube pan and cut gently through the batter to remove the bubbles. Bake in a 325 degree oven for about 1 hour, or until done. Remove from oven and invert pan for 1 hour.
