Upside Down Cake

Ingredients

cups sifted cake flour
1 1/2
tsp baking powder
1/4
tsp salt

tbsp shortening

cup sugar

egg, well beaten
1/2
cup milk
1
tsp vanilla
4
tbsp butter
1
cup brown sugar
Pineapple, figs, pears, apricot halves, or cooked prunes

Directions

Sift flour once, measure, add baking powder and salt and sift together three times. Cream shortening thoroughly, add sugar gradually and cream together until light and fluffy. Add egg, then flour, alternately with milk, a small amount at a time. Beat after each addition until smooth. Add vanilla. Melt butter in a heavy eight-inch skillet. Add brown sugar and stir until melted. On this arrange pineapple slices or other fruit such as apricot halves, drained, cooked prunes, halved and pitted, and nuts. Pour batter over fruit and bake in a moderate oven, 325 degrees for about 40 minutes or until done. Loosen cake from sides and bottom and serve upside down. Serve with topping of slightly sweetened whipped cream, if desired.
