Royal Cream Puffs

Ingredients

cup sifted all-purpose flour
1/8
tsp salt
1/2
cup margarine
1
cup boiling water
4
eggs unbeaten
SOFT CUSTARD:
2
eggs, slightly beaten
1/4
cup sugar
Few grains of salt
2
cups scalded milk
1/2
tsp vanilla extract
Directions

Sift together flour and salt. Combine margarine and boiling water in a saucepan. When mixture comes to a boil, remove from heat and stir in sifted dry ingredients all at once. Stir vigorously with a wooden spoon until mixture forms a ball and leaves side of pan. Add eggs one at a time, beating thoroughly after each addition. Continue beating until dough is smooth and shiny. Drop by tablespoons onto greased baking sheet about two inches apart. Bake in hot oven at 425 degrees for about 30 minutes. When they are cool, remove tops. Unmold custard style dessert into each cream puff. Replace tops and sprinkle with confectioners' sugar.

SOFT CUSTARD: Beat eggs slightly, add sugar and salt and combine. Add the milk slowly, stirring constantly, then cook in a double boiler until the mixture will coat a metal spoon, stirring constantly. Be sure that the water in the lower jacket of the boiler simmers rather than boils. Remove the upper part of the boiler immediately, flavor with vanilla and set in cold water. Stir the custard occasionally while it cools.
