Graham Cracker Crust Pie

graham crackers

cup sugar

tbsp cornstarch

tbsp flour

tbsp salt

squares chocolate, cut in small pieces
2 1/2
cups milk
2
eggs, separated
1
tsp vanilla
4
tbsp sugar
1/2
tsp vanilla
Directions
1.
Fit 15 grahams into greased 9-inch pie dish, cutting to shape with a sharp knife and a light touch, Blend next five ingredients in top of double boiler; add most of milk slowly, stirring until smooth. Cook over low heat until thickened, then continue cooking over boiling water 10 minutes, stirring constantly. Add beaten egg yolks and remainder of milk and continue cooking 3 minutes longer with constant stirring. Cool while beating. Add teaspoon of vanilla. Fill cracker pie shell and chill.

Just before serving make meringue of egg whites, sugar and 1/2 tsp. vanilla. Pile on pie in peaks and bake at 325 degrees for 15 minutes. Makes one 9-inch pie.
