Holiday Steamed Pudding

Ingredients

(6 oz) package (1 cup) semi-sweet real chocolate morsels

cups chopped pecans
1
cup currants
1
cup quick oats, uncooked

cup chopped candied cherries
3/4
cup unsifted flour
3/4
cup sugar

tsp cinnamon
1 1/4
tsp baking soda

tsp salt

cup buttermilk*
2
tsp vanilla extract
Directions

Melt over hot (not boiling) water, semi-sweet real chocolate morsels; remove from heat and set aside. In large bowl, combine pecans, currants, oats, candied cherries, flour, sugar, cinnamon, baking soda and salt; toss together. Add melted chocolate, buttermilk and vanilla extract, mix well. Press into greased 5-6 cup heat-proof mold. Cover tightly with aluminum foil. Place covered mold on rack or trivet in deep kettle or roasting pan. Pour in boiling water halfway up side of mold (not touching cover). Cover kettle; simmer over low heat 2 hours or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from mold and cool completely. Return to cleaned mold if using as a gift. To reheat, cover mold with aluminum foil and bake at 350 degrees for 30 to 45 minutes. Serve warm with hard sauce, sweetened whipped cream or ice cream.

To make buttermilk: measure 1 tablespoon vinegar or lemon juice plus enough sweet milk to make 1 cup may be substituted for 1 cup buttermilk.
