Cream Sherry Fruit Cake

Ingredients

cups chopped dates
2
cups chopped pecans
2
cups whole candied cherries
1
cup mixed candied fruit
1
(12 oz) package (2 cups) semi-sweet real chocolate morsels
1/2
cup cream sherry
6
eggs
1
cup sugar
2
tsp vanilla extract
3
cups unsifted flour
2
tsp salt
Directions
1.
In large bowl, combine dates, pecans, candied cherries, candied fruit and semi-sweet real chocolate morsels; add sherry and let stand 1 hour, stirring occasionally. Preheat oven to 325 degrees. In large bowl, beat eggs until thick and lemon colored (about 5 minutes). Gradually beat in sugar and vanilla extract. Combine flour and salt; mix together with fruit mixture. Fold in egg mixture. Spread into greased and floured 9" tube pan.

Bake at 325 degrees for 1 hour. Remove from oven; cook in pan 15 minutes. Remove cake from pan; cool completely on wire rack. Makes one 9" fruit cake.
