Melt chocolate over hot, not boiling water. Remove from the heat. Combine milk, water, salt and vanilla and stir into chocolate until smooth, but do not beat.

Spread in a buttered 9 x 5 x 1 1/2" pan or drop from a spoon onto a baking sheet or foil. Chill until firm.

VARIATIONS: FUDGE BALLS: Chill until firm enough to handle and form into small balls. Roll in instant sweet cocoa mix, chopped nuts or coconut. FUDGE LOGS: Chill until firm enough to handle and form into finger shaped cylinders. Dip ends in melted semi-sweet chocolate, then in nuts and chill. VARIETY DROPS: Add one of the following to the basic mixture: 1/4 cup peanut butter and 1 tablespoon water; 1 1/2 cup coarsely chopped nuts; 1 tablespoon instant coffee, or 1 cup miniature marshmallows. Makes: about 1 1/4 pounds
