Mw Fresh Strawberry Pie

Ingredients

baked pie shell
1 1/2
-quart fresh strawberries, cleaned and hulled
1 1/3
cups sugar
1 1/4
cups water
1/8
tsp salt
1/4
cup cornstarch
1
tbsp lemon juice
red food coloring
Directions
1.
In 4-cup glass measure, combine sugar, water and salt with 1 cup berries. Microwave 4 minutes on HIGH, or until boiling.
2.
Mash cooked berry mixture.
3.
Add small amount water to cornstarch in small custard cup. Stir to make a smooth paste.
4.
Mix into cooked berries. Microwave 1 1/2 to 2 1/2 minutes on HIGH, or until thickened and clear, stirring once.
5.
Stir in lemon juice and desired amount of food coloring. Cool.
6.
Meanwhile, arrange remaining whole berries, point up, in baked pie shell.
7.
Pour cooled glaze over whole berries.
8.
Chill a minimum of 2 hours. Serve with whipped cream if desired. Yield: 1 (9-inch) pie
