Mw Upside Down Rhubarb Cake Dessert

Ingredients

cup rhubarb, cut up in small pieces (May substitute 16 ounces of any frozen fruit for rhubarb, and appropriate flavor of jello.)

package (2-layer size) yellow cake mix
1
package (3 ounce) strawberry jello
1
cup sugar
2
cups mini-marshmallows
Directions
1.
Make cake mix according to package directions but decreasing liquid called for by 1/4 cup.

Combine jello and sugar.
3.
Lightly grease bottoms of two round glass cake dishes.
4.
Spread half of rhubarb in bottom of each dish, then sprinkle half of jello mixture over each.
5.
Sprinkle half of marshmallows over jello mixture, then spread less than half of cake batter over each.
6.
Place cake dish on wax paper in bottom of microwave oven and microwave each separately, 7 to 8 minutes on HIGH, quarter-turning every 2 minutes, until edges begin pulling away from side of dish and top is slightly moist in center (cupcakes 1 1/2 to 2 minutes on HIGH)
7.
Cool 5 to 10 minutes, then loosen with spatula and turn over onto serving plate. Yield: 2 (8-inch round) cakes plus 3 to 4 cupcakes
