Tuna Portobella Melts

A healthy and delicious way to watch the carbs.

Ingredients
4
medium sized portobello mushroom caps
1
can albacore tuna in olive oil
1
medium tomato, diced
1
medium avocado, diced
2
celery stalks, diced
1
tbsp fresh chives, minced
1/2
tsp garlic powder
1
tsp olive oil
3/2
tsp fresh squeezed lemon juice
sea salt and ground pepper to taste
4
tbsp shredded parmesan cheese
Directions
1.
Preheat broiler.
2.
Place the mushroom caps face up on a baking sheet. Drizzle caps with olive oil and season with salt and pepper.
3.
In a bowl, combine the tuna, tomato, avocado, celery, chives, garlic powder, olive oil, lemon juice, salt and pepper.
4.
Broil just the mushroom caps for 2-3 minutes. Remove from oven.
5.
Top each mushroom with tuna mixture and lastly top each cap with 1 tbs parmesan.
6.
Pop them back into the oven for 1-2 minutes or until cheese is just melted.
