Crepes A Delectable Dessert

Normally I cook them as a breakfast asset, but they are good also after dinner. This book will teach you how to prepare this phenomenal french desert french dish in the comfort of your own home.

Ingredients
For this dish you will need:

cup of all purpose flour
1/4
cup of sugar

eggs

cup of milk

tbsp of butter (melted)

pinch of salt
Directions

Preparations:

Sift your 1 cup of flour by using a flour sifter. (Make sure you are holding the sifter above a mixing bowl.)

Add your 1 pinch of salt and 1/4 cup of sugar to the sifted flour, and stir with a whisk

Preparing the batter:

To make your crepe batter you will need a small mixing bowl and a whisk

Break 2 eggs and beat them in a separate container
7.
Pour the egg yolks into the CENTER of the flour and mix thoroughly until the batter is smooth

Add 1 cup of milk to the batter and mix until the batter is smooth
9.
After you are finished making the batter you will need to brown your butter a frying pan and plastic wrap is required

Heat the 2 tablespoon of butter in the frying pan over LOW HEAT (overcooked butter produces a bad smell!)

Remove the frying pan from the fire once the butter has reached a golden brown color

Add your golden brown butter to the crepe batter and mix quickly. Cover your crepe batter with plastic wrap and let the batter sit for half a day. I recommend using a refrigerator to keep the mixture cool.

Making the Crepes: Its time to seal the deal!

To prepare the crepes a frying pan, a dish and a ladle is required.

Make sure your frying pan is over LOW HEAT.

Pour all natural olive oil into the frying pan . Olive oil will prevent the crepes from sticking to the pan.

Pour your crepe batter and use enough batter so it spreads thinly across the base of the frying pan for each crepe that is prepared

Tilt your frying pan quickly so the batter will spread thinly and evenly
19.
Once the crepe batter browns at the edges turn over the crepe using a fork
20.
Place the crepe on a dish when BOTH sides are golden brown. (use the previous three steps to cook the remaining crepes)
21.
Fold the crepes into quarters and place each crepe on a serving plate
22.
Sprinkle sugar on the crepes to taste and they are ready to eat!
